Mix tomato, chile, oregano in small bowl. Season w/salt; let salsa stand for 30 min.
Meanwhile, toss both cheeses w/flour in med bowl. Cook sausage in med pan over med heat, breaking up w/wooden spoon, until it begins to render, about 1 min. Add onion and continue cooking until sausage is cooked and onion is soft and translucent, about 5 min.
Transfer sausage to bowl; return pan to heat. Add beer; simmer, sitrring occasionally and scraping up any browned bits. Whisking constantly, add cheese mixture a 1/4 cupful at a time, allowing it to become blended and smooth between additions. Stir in sausage mixture.
Can be made 30 min ahead. Let stand at room temp.
To reheat, warm skillet w/ queso over med heat; stir until melted and bubbly.
Using slotted spoon, spoon salsa over queso. Serve in skillet w/ chips on the side.
