Quick entree for dinner or brunch.
Preheat oven to 400?. Line a l0-inch Pyrex pie pan with a thin layer of your favorite pastry dough. Brush the crust with beaten egg white and bake for about 5 minutes. Remove from oven and let cool. Reduce oven to 375?.
Put a layer of Swiss cheese on the bottom of the crust. Add cup of thinley diced ham (or omit, see note).Add layer of fresh spinach, chopped well. Sprinkle 1 cup Swiss cheese over spinach. Saute onions and mushrooms in butter until soft; spread over swiss cheese. Cover vegetables with cheddar cheese.
Beat eggs with salt, nutmeg and cayenne. Set aside.
Heat milk and cream in pot until scalding. Very gradually stir hot milk into the eggs, stirring quickly all the while. When most of the milk is incorporated, stir the egg mixture back into the pot, turn off burner and let it sit while finishing up, stirring constantly.
Pour the custard carefully into the filled pie shell. Bake in 375? oven (put a cookie sheet or aluminum foil under pie pan) about 30 minutes, or until it is set and brown on top. Allow to cool and set about 15 minutes before serving.
If omiting meat, double mushrooms & onions.
