Place pie crusts in the bottom of 2 large pie pans. Saute onion, red peppers, mushrooms and add to the bottom of the crust. If you want a veggie quiche add 2 large handfuls of spinach, small pieces. If you want a bacon quiche, add chunks of bacon. Set aside. Blend melted butter, eggs, flour, baking powder, salt & pepper. Stir in cottage cheese, cheese. Pour over vegetables and place on a cookie sheet. Bake in the preheated oven, 375, until center of quiche is set and a knife inserted in the middle comes out clean, about 45 minutes. Allow to stand for 10 minutes before serving.
