Poke holes on the inside of pie crust with fork. Line inside of pie crust with foil and bake at 450 degrees for 8 minutes. Remove foil and bake additional 5 minutes or until crust is set and dry. Remove and reduce oven to 350 degrees. Saute onions, peppers, and mushrooms in butter until softened. Combine vegetables with remaining ingredients and pour mixture into pie crust. Bake at 30 degrees for 40 minutes or until center is set. Let stand for 10 minutes before cutting. Top each slice with a dollop of sour cream, if desired.
