Adam's favorite, and done in minutes
Pre-heat your oven to 400 degrees.
Rub the garlic into each lamb chop, then season with a mix of rosemary and thyme. ( I just mixed them in a bowl and then sprinkled generously over one side of the chops). Then season them with salt and peper.
Place the chops season side down in a hot grill pan/ or grill skillet (that's oven safe). Cook for 4 minutes, then turn and cook for another minute to get a good sear on each side. Put the grill pan into a hot oven for another 4-5 minutes.
Rest, then serve.
