Dice onion and cook in butter and olive oil until translucent. Add in diced carrot, onion, garlic and herbs and spices. Cook until soft.
Add chicken broth and tomato products and cook for about 30 minutes. Then blend either in blender or with immersion blender until smooth. Stir in half and half and serve.
Garnish with freshly grated parmesan if desired.
