Suggest a better descriptionIn a small saucepan, stir together the vinegar, salt, sugar, smashed garlic clove and black peppercorns. Cook over medium high heat until mixture reaches a simmer.
Place the thinly sliced red onion in a pint-sized mason jar. Pour the hot vinegar mixture over the onions. Place the lid on top and give the jar a quick shake. Let the onions marinate for at least 30 minutes.
Serve immediately. Keep refrigerated in a sealed container for up to 2 weeks.
