Preheat oven to 500 degrees. Marinade fish in Italian (or other oil/vinegar) dressing for about 10 minutes.
Crush potato chips (or use panko crumbs) and spread on a plate.
Remove fish from marinade and press into crumbs to coat. Place on a sheet pan. Bake for 10 minutes.
