This is a great way to use up your leftover quinoa pilaf. These delicious savory cakes can be finished in the Ovention Matchbox oven from frozen in 3 minutes. Crispy on the outside and fluffy on the inside, this versatile side dish works great as a healthy starchy side dish. Pair with a lean protein like fish, chicken or tofu and some grilled or roasted vegetables.
In a large stainless steel bowl, mix all ingredients together.
Place some plastic wrap on a cutting board and add a splash of olive oil to the top of the plastic wrap. Add some oil to the inside of a 2 1/2 inch round ring mold. Place the ring mold on top of the plastic wrap. Using 1/4 cup of your quinoa mixture, fill the ring mold and lightly pack. Place molded cakes on a sheet pan lined with parchment paper. continue this process until all your mixture is used up and you have 36 cakes. At this point you can either cover and freeze the quinoa cakes or cook them right away.
Ovention settings:
From frozen ~~~ 1st stage. 465 degrees / 70 top blower / 100 bottom blower / 2 minutes
2nd stage. 480 degrees / 90 top blower / 100 bottom blower / 1 minute
Unfrozen ~~~~~ 1st stage. 465 degrees / 80 top blower / 100 bottom blower / 2 minutes
2nd stage. 480 degrees / 100 top blower / 100 bottom blower / 30 seconds
Panning for both methods is the same: line a half sheet pan with parchment paper, spray parchment with vegetable oil spray, place cakes on parchment and then spray top of cakes to help browning.
I like using a variety of colors of quinoa (red, white, black) for a unique look. Feel free to try some different vegetables with the mix as well (bell pepper, mushrooms, peas), just make sure they are pre-cooked.
