Rinse quinoa in strainer under cold water for a couple of minutes.
Heat pan to medium-high heat, add olive oil and salute onion until translucent.
Add quinoa and coat well with oil before adding liquid.
Add liquid, a little at a time. Wait for the liquid to be absorbed by the quinoa before adding more stock.
Repeat this process until quinoa has become puffy and to the texture you desire. (About 30min. This part is a labour of love or a royal pain in the ass :-))
Add chilled butter cubes and incorporate.
Add cheese and incorporate.
Season with salt and pepper if desired.
*You can add any variety of steamed veggie or spinach to jazz up this dish.
I add a little truffle oil at the end for a punchy aromatic finish!
