Toast quinoa, then rinse

Transfer the quinoa to a medium bowl and toss with 1/3 cup of dressing. Let cool fof 10 minutes.
Before serving, add tomatoes and onion to the quinoa and toss to coat. Toss spinach with remaining 1/3 c dressing in large bowl. Divide the spinach among four plates. Mound the quinoa on the spinach and sprinkle with almnds
