Cook quinoa in water with 1 teaspoon salt for 15 min(bring to a boil, cover and heat). Let sit for 5 min. Make dressing with mustard, olive oil, zest/juice of 1 mandaran orange and dressing. Pour over warm quinoa. Scatter avocado over quinoa and add the segments of the 4 mandarin oranges. Peel one more mandarin orange and squeeze over salad.
