Cut the sweet potato into large cubes.
Heat the oil in a large skillet over medium-high heat. Add garlic and stir immediately so it doesn't burn. Add the greens to the skillet. Move the greens frequently using tongs. Cook until they are tender.
Add the quinoa & sweet potato to the pan. Sprinkle with salt and pepper. Stir.
Remove from heat and serve.
