Easy, delicious, vegetarian meal for two
Boil 4 cups of water in pan. Set aside.
Chop 4 rainbow chard leafs into bite size pieces.
Put chard in pan. Drizzle chard with water. Simmer on low heat.
As water in original pan boils, add 2 cups of quinoa. Turn heat to medium/med-low for apx. 15-20 mns.
Once quinoa is done, add chard to quinoa, 4 tbsp of Parmesan and pesto to taste.
Serve, and enjoy!
