In a medium sized pot, combine the water and quinoa; bring to a vigorous boil. Reduce the heat, cover and let simmer until quinoa is tender, about 15 minutes. Remove from heat and fluff up with a fork.
Brown the minced (or chopped) garlic, then add the spinach to the pan and saute.
In large salad bowl, add cooked Quinoa and mix with remaining ingredients. Toss and refrigerate till serving time.
