"In this preparation, known as Kouneli me Lemoni, the preparation of the rabbit begins in the morning so it can marinate all day. Then, in the evening, it is braised in lemon juice and over the course of two slow hours of cooking, becomes a delectable golden brown. there will be very little liquid left in the skillet or casserole, and what is left is a gravy that you can spoon over the rabbit pieces and serve with manestra (the Greek word for what is more commonly known by the Italian "orzo") browned in butter. In the morning arrange the rabbit pieces in a ceramic bowl or casserole. Mix the vinegar with 1 cup of the water and pour over the rabbit to cover. Marinate, covered with plastic wrap, in the refrigerator for 8-10 hours.
Drain, discarding the marinade, wash well, and pat dry with paper towels. It is important to dry the rabbit, otherwise it will not brown properly. Rub the rabbit pieces with the garlic halves, then sprinkle with salt, pepper, and oregano. In a casserole or skillet, melt the butter with the olive oil over medium-high heat. When the butter stops sizzling, brown the rabbit well on all sides, 8-10 minutes. Pour in the lemon juice a little at a time, pouring in more as it evaporates, until none is left. Add the remaining 1 cup of water and reduce the heat to low. Cover and cook until the meat is tender, moistening with more water to keep it from drying out (it shouldn't need any though), about 2 hours. There should be very little liquid left except the butter and olive oil at the end of the cooking time. Serve immediately.
Cooking time does not include the 8 to 10 hours of marinating time.
