In a medium enameled cast iron casserole, heat the butter and the olive oil until shimmering.
Add the vegetable and cook over low heat until softened (about 30-40 minutes)
Add the meat and sauté` briefly on highest heat.
Cover with the tomatoes just enough to cover the meat
Adjust with salt and pepper and 1T sugar
Let it go uncover on low heat until the tomatoes sauce is reduced (approximately 2 ½ hour)
Add the basil just a few minutes before turn off the heat.
Served over tagliatelle with parmesan cheese.
