Grandma Lupe's Raisin Pie. First started by Grandma and modified by Mom (Rachel Luna) and myself.
Source: Mom with some modifications
Soak raisins in water with zest from one lemon. Soak for about an hour or until plump.
Use about 1/4 cup of water to dissolve corn starch separately to make a slurry.
Place raisins, with remaining water used for soaking into sauce pan with vanilla, cinnamon and sugar.
Simmer at medium heat.
Add corn starch slurry and maintain at simmer until filling starts to thicken.
Remove from heat and pour into pie crust.
