Amma's Rajma
Add ginger, bay leaves, and garlic to pot with oil and fry until raw ginger smell fades. Add onion and fry until they turn soft and brown. Add the tomatoes and the remaining spices and stir until mixture is a paste in the pot.
In container, set aside half the kidney beans and mash them up. Add this mash with the whole kidney beans to the pot and thoroughly coat the beans. Add water until kidney beans are covered completely. Cover pot and simmer for two hours.
