In large stock pot, heat olive oil over medium-high heat.
Add meat and brown well.
Add onion, cook until they start to brown.
Add remaining ingredients and reduce heat to simmer.
Start with lower amounts of spices, taste and add more if desired.
Cook at least 30 minutes, 60 minutes better.
Good immediately and even better if allowed to simmer for a few hours.
