Preheat oven to 375 degrees. Bake 10-12 minutes. Makes 60 large cookies.
Use Kitchen-Aid mixer:
Add shortening and sugars to mixing bowl and mix until light and fluffy. Add eggs and vanilla and mix.
Sift flour, baking soda, baking powder and salt then add to wet ingredients and mix.
Add coconut, nuts and raisins or chocolate chips and mix.
Lastly, add corn flakes and mix by hand.
Use 1-inch ice cream scoop to drop onto cookie sheet.
