CRUST: Place pretzels in a food processor. Pulse until chopped. Add butter and sugar and pulse until combined. Press mixture onto bottom and sides of two 9" pie dishes. Chill 30 minutes. (You can just crush pretzels in a bag and mix by hand as well.)
FILLIING: In a bowl, beat cream cheese, sugar, and vanilla until well mixed. Add Raspberries and fold in and stir until well mixed. Fold in Cool Whip. Spread into two pie dishes over the pretzel crust. Cover, and chill until firm, about 3 hours.
