•Mix together and spread the tomato paste, garlic, onion and spices in the bottom of a shallow round ovenware dish.
•Preheat the oven to 375 degrees F
•Very thinly slice the remaining ingredients and place them on top of the tomato sauce.
•Arrange the slices of vegetables concentrically from the outer edge to the inside of the baking dish overlapping so just a bit of each vegetable is visible. Alternate the vegetables to make a pattern.
•Cut a piece of parchment paper into a circle to cover the top of the vegetables and place on top. Tip: put a pie plate on top of the parchment paper to keep the vegetables in place while it bakes.
•Put the dish in the oven for 45-50 minutes.
