Suggest a better description1. Heat oven at 375. Heat olive oil on med-high heat in cast iron skillet; and add garlic and onions. Cook until translucent. Add red and yellow peppers. Add salt and pepper. Add basil. Add diced tomatoes and stir until combined. Remove from heat.
2. Alternating vegetable begin ringing the skillet.
3. Make topping by combining olive oil , garlic and herbs. Brush over veggies in skillet.
4. Cover skillet with foil. Bake for 40 mins covered then 20 mins uncovered.
