Healthy, tasty brownies
Chop 1/4 cup pecans coarsely in a blender (quick whiz). Set aside to add at end.
Chop remaining pecans in food processor until finely ground.
Add vanilla, cocoa powder and dates. Process until very well combined.
Transfer to a bowl and mix in reserved coarsely chopped pecans, chopped cherries and 1/4 cup cacao nibs, reserving the rest of the nibs to sprinkle on top.
Press into 9x9 pan firmly with back of spoon.
Melt chocolate chips and spread on top. Sprinkle remaining cacao nibs.
Refrigerate until set.
