It’s a Raw Mexican night! Use leftover taco meat from the previous nights dinner and stuff lettuce shells with your favorite vegetables. Top with lime cashew crème. Enjoy any leftover cream with sliced vegetables as a snack!
WALNUT MEAT - In a food processor, combine the nuts, seasonings, garlic, apple cider vinegar, and Braggs.
Pulse until a fine meal forms
LIME CASHEW CREME - Combine all ingredients into a high powered blender or food processor.
Puree until very smooth, about 2-3 minutes.
To Assemble: Fill walnut meat into romaine leaves. Top with shredded carrots, sliced avocado, chopped tomatoes and lime cashew crème.
