Add olive oil and crush garlic (don't burn) into a large pot and simmer (7 on left front stove burner) Chop celery, 1/4 bunch of kale, carrots, celery leaves and 1/2 of the onion and place in large pot, season with salt and pepper Simmer above ingredients for 15 minutes with lid on pot Blend tomatoes, half of onion, 3/4 bunch of kale and celery leaves in Ninja (and hold) Add blended ingredients above, season again with more salt and pepper and simmer for an additional 15 minutes with lid on pot Clean whole chicken, including neck, liver etc and hold in bowl in refrigerator Add water to a little less than 3/4 of large pot and let simmer for 15 more minutes with lid on pot Then add whole chicken with neck and liver, add any additional water and simmer for 2 hours with lid partially off pot for first hour and then remove the lid for the second hour Remove whole chicken and neck, separate bones and add chicken meat back into the large pot Boil egg noodles in a medium pot, once boiled add egg noodles to large pot Serve and enjoy
The key is to simmer vegetables, simmer and use whole chicken during cooking process to bring good fats into the dish. Do not let the soup hard boil, you need to make sure that you are simmering the entire cook time and not over heating
