Add Cilantro little by little until blended smooth.
Place Mayo and water in large stainless bowl, and mix till smooth.
Add the blended ingredient to mayo mixture, mix thoroughly. place in air tight container and refrigerate. Will keep 3 days.
Right before serving, Toss greens and dressing.
After plated; sprinkle each dish with tortilla strips, cotija cheese, and a few red bell peppers for color on top.
To Make Tortilla strips; Cut corn tortillas into matchstick size pieces. Heat some oil in a saucepan, fry tortilla stripes until crisp. Remove to drain on paper towels.
note; Cotija cheese is a hard cheese, similar to parmesan. It found in some grocery stores and most Mexican markets
