Can be made traditionally without sausage for vegetarian meal.
Parboil Unil a'dente peppers and onions.
In large stock pot add peppers, onions, egg plant and olive oil. Sauté until egg plant starts to soften, approx 10 minutes.
Add plum tomatoes with liquid from one can, tomato sauce, basil, garlic, tarragon, fresh tomatoes and cyan pepper.
(At this point some of ingredients can be placed into secondary pot for vegetarian/vegan meals. Finish same as with sausage)
Add cooked sausage.
Simmer for 45 minutes
Cook pasta as package directed to a'dente,
Add to ratatouille and serve.
