Good enough for any southern folk
Make roux from olive oil and flour
Boil cauliflower until soft, drain reserving water.
In a blender add cauliflower, white beans and tofu. Blend to creamy consistency.
Pour blended mixture into sauce pan. Heat on medium heat. Add mixture of water and roux to make gravy consistency. Mix in spices to taste.
Mix in mushrooms, cook 5 minutes until mushrooms soften. Mix in peas until heated.
Potatoes: with a fork smash down individual potatoes. Place potatoes on baking sheet drizzle with olive oil salt ann pepper. Roast at 450 to golden brown.
Spoon gravy over potatoes.
