Preheat oven to 350 degrees. Spray 9x9" baking pan and set aside.
Sift first seven ingredients together in large bowl. Whisk the brown sugar in with a fork.
Finely chop the crystallized ginger and set aside. (Tossing a spoonful of the dry ingredients over this ginger as you chop it keeps it from sticking to the knife.)
In a medium bowl with a wire whisk beat together the last six ingredients.
Add the wet ingredients to the dry with a few swift strokes of a wooden spoon.
Pour into pan and sprinkle crstallized ginger over the top. Bake 30-40 minutes or until a toothpick in the center comes out clean. Cool on rack.
