From Emeril's "Louisiana Real and Rustic" cookbook, highly modified by me.
Heat the oil in a heavy pot. Saute the onions, bell peppers (you can mix the colors, if you want), and celery for about 5 minute. Salt and pepper generously.
Add the bay leaves, garlic and sausage and continue to saute for 5-6 minutes more.
Add the beans (which have been picked through, rinsed and soaked overnight), the ham bone, the ham hocks or shanks, the thyme and the cayenne pepper. Then add enough water to cover this entire mixture. Bring to a boil and then reduce to medium heat and simmer, uncovered, stirring occasionally for about 2 hours. Important - If the mixture becomes too dry, add more water. It should not be dry and thick, but soupy!
Use a wooden spoon to mash about 1/4 of the beans against the side of the pot. Continue to cook, stirring occasionally for another 1.5 hours or until the mixture is creamy and the beans are soft. Test for seasoning and add salt, pepper, and cayenne pepper (or even creole seasoning) if necessary. Again, add more water if it becomes too thick! The mixture should be soupy but not watery.
Remove ham bone / shanks and carefully remove all the meat. Add the meat back to the pot and discard the bones.
Remove the bay leaves and serve over the steamed rice using the chopped scallions as the perfect garnish. Also have plenty of hot sauce around for those that like to spice up this dish!
This is from one of his first cookbooks. I hardly recognize the way he makes it now with all the "BAM" garbage. This is a difficult recipe to mess up and when I make it, all I need is to make a couple of phone calls and I have a house full of people ready to gobble it up!
