Mince onion and garlic; sautéed in a frying pan with 2 Tablespoons olive oil until onions are translucent. Add choppe carrots to the pan and cook down a little. Add turkey to the pan and cook thoroughly, making sure no pink remains. Coarsest chop tomatoes while veggies in frying pan are cooking down. Rinse and drain dry black beans. Add all ingredients to the crockpot and cook on high for 6-8 hours.
