1. Add the sliced onions with a pinch of salt and two tablespoons of water to a saucepan and cook on a medium heat until the onions are soft.
2. When the onions are softened add the sugar and vinegars - this will start the caramelising process.
3. Continue to cook on a medium heat until you have a soft sticky mixture(around 10-15mins)
4. Remove from the heat. Leave to cool before storing in an air tight container in the fridge.
The chutney can be made in larger batches to last for a couple of weeks.
