2. In a medium bowl, stir together the cream cheese, sugar, flour, and vanilla.
3. In a large bowl, stir together the red velvet cake mix, the eggs, and the oil to make a dough.
4. Make a ball from about 3 tablespoons of the red velvet dough. Flatten the ball and top it with 1 tablespoon of the cream cheese mixture. Carefully wrap the dough up around the cream cheese to enclose it completely. Place the cookie on a parchment-lined baking sheet. Repeat with the remaining ingredients. Bake the cookies for 10 minutes, until set but slightly soft.
5. Before serving the cookies, melt the white chocolate in the microwave. Pour the melted chocolate into a zip-top bag and seal. Snip a tiny hole in one corner of the bag and use the bag to pipe squiggles of melted chocolate over the tops of the cookies.
