Suggest a better descriptionMix pancake mix, buttermilk, cocoa, eggs, vegetable oil, vinegar and food coloring. Blend together with a whisk or spoon. Let batter sit for 15 minutes while you make the glaze.
In medium size bowl add all glaze ingredients and blend until smooth and silky. Set aside.
Spray griddle with noncook spray then heat griddle to medium heat. Use 1/4 cup batter per pancake flipping when bubbles start to break on surface. Cook from 1-2 minutes on each side until fully cooked. Remove and stack pancake on plate and spread a layer of the cream cheese glaze.
Repeat with another pancake then stack the 3rd pancake and add more cream cheese. Glaze and sprinkle with powdered sugar then serve immediately
