Beat white cake mix and next 3 ingredients according to package directions.
Beat yellow cake mix and next 6 ingredients according to package directions.
Spoon red batter alternately with white batter into 3 greased and floured 9-inch round cake pans.
Swirl batter gently with a knife.
Bake at 350 for 22 to 25 minutes or until toothpick inserted in center comes out clean.
Cool pans on wire racks 10 minutes. Remove from pans and cool completely on wire racks.
Beat cream cheese and butter at medium speed until creamy.
Gradually add powdered sugar, beating at low speed until smooth.
Add peppermint extract, beating until blended. (*2 tsp vanilla extract may be substituted for peppermint)
Spread Frosting between layers of cooled cake and on top and sides of cake.
Garnish, if desired, with crushed candy or get creative and garnish any way you choose!
Serve within 2 or 3 hours
Cake may be chilled up to 2 days or frozen up to 1 month. If cake is frozen, thaw completely before garnishing to prevent crushed candy from running. Do not refrigerate after garnishing.
The frosting recipe "as is" makes about 5 cups. *To be sure I had enough to frost the entire cake, I used two 8-oz packages of cream cheese and 2 cups of butter in the recipe. I also cut back the Peppermint extract to 1 teaspoon to give it a lighter flavor.
