Red Wine Short Ribs of Beef
Cooker: Large round or oval
Setting and cook time: low for 7-8 hours (I think longer is better... can easily do 9-10 hours) make sure the slow cooker goes into "heat" mode once the cook time is over.
1. Pat ribs dry and season with salt and pepper. Heat olive oil in sauce pan over medium heat and brown ribs in batches, transferring them to a bowl. Save any juices. Add them to the ribs. This can be done the night before and put away for the next morning.
2. Combine the wine, ketchup, soy sauce, garlic, brown sugar, and pepper in slow cooker and mix until smooth. Add the ribs submerging them in the sauce. Distribute the onions over the ribs. Cover and cook on low until tender and the meat starts to separate from the bones.
3. Transfer the ribs to a platter and set aside. Let the sauce cool for a bit and then spoon the liquid fat off the surface and discard. Pour the sauce over there its and serve immediately.
