This is a beef, bean and cheese enchilada recipe
Brown meat, season or spice to taste
in medium saucepan warm refried beans on low heat
Once browned, drain grease and add 3/4 cup of water and taco bell taco seasoning pack. mix and bring back to boil.
lower heat to medium and simmer for 8 minutes
add cooked meat to heated refried beans in saucepan and mix well
Preheat oven to 400 degrees
Spoon one full spoonfull of bean/beef mixture into each flour tortilla along with a medium pinch of shredded cheese and roll each tightly Place each enchilada in the baking pan in 2 rows of 8. ( can vary how many fit depending on how tightly rolled)
Pour each the enchilada sauce, chili, and queso in this order over the top of the enchiladas, spreading between each layer.
Sprinkle any remaining shredded cheese over the top
Cook in oven uncovered for 20-25 minuted until bubbling
Serve immediately and enjoy!
