this makes one gallon. A glass gallon jar is best.
Mix cucumbers, celery, onions, and salt. Let stand 1/2 hour.
Mix sugar, celery seed, vinegar, and mustard seed (DO NOT HEAT). Add to cucumber mixture and stir together. Put in gallon jar and roll for 10 minutes ( to mix good). Refrigerate. Should be ready in about one week.
Be sure to slice the cucumbers thin. You can also cut the celery into larger pieces as these are a great snack in themselves when ready.
