Easily make refritos (refried beans) in South Africa without having Pinto Beans!
Drain and rinse your beans. Put beans in a large pot and add half the onion and all of the bell pepper and garlic. Cover with about 6 centimeters of water.
Bring beans to the boil and keep it there until they become soft and the skins split. Be sure to stir and ensure they stay covered with water by adding more from your kettle periodically.
Add salt. Let cool.
Blend the beans in a liquidiser until they are smooth. You want the final product to be somewhat runny, as you are going to fry it again. You may need to add water or remove water, depending. Play it by ear and trust yourself.
Heat a large pot and coat the bottom with the sunflower oil. Add the remaining onion and fry the onion until they are black around the edges and burnt. Carefully remove the onion and discard. Add your beans back to this oil and cook until you get the desired consistency.
Adjust salt one final time before removing from heat. You can also add some ground cumin seeds as well for extra flavor.
Do not add salt until the beans are soft! They will remain hard if you do so.
