Beat the egg and brown sugar together in mixer. Add the canola oil and buttermilk.
Sift the flour, baking soda and salt together. Add to the egg mixture.
Add the rhubarb. At this time, you have the option of adding 1/2 cup of raisins or nuts, if desired.
Pour batter into a 9x13 pan.
For the topping, mix the sugar, cinnamon and butter together and sprinkle on top.
Bake at 350 degrees for one hour.
If you do not have buttermilk, add 1 Tablespoon of Lemon Juice or Vinegar to the milk and let it set for a few minutes.
