Preheat the oven to 350 and lightly oil a 7x12 glass baking dish.
Place the rhubarb and 1/4 cup sugar in a bowl, stir, and set aside.
Mix the butter with remaining sugar, add the egg and vanilla and mix well.
Mix the flour, baking soda and spices on top of the mix. Add the buttermilk or yogurt
on top and mix all together until well mixed.
Fold in the rhubarb sugar mix and spoon into the baking dish.
Bake for 45-50 minutes, until golden and puffed and springs back when pressed gently.
After it is cool, you can dust with confectioners sugar for appearance sake.
