Suggest a better descriptionCombine dry ingredients. Beat together brown sugar, oil, egg, vanilla and buttermilk. Add dry ingredients, mixing until well blended. By hand, stir in rhubarb and walnuts. Pour batter into muffin cups. Prepare topping and sprinkle over batter. Bake at 375 degrees for 20 - 25 minutes. Makes about 2 dozen muffins.
