Suggest a better descriptionPreheat oven to 400 degrees
Grease muffin tins. Combine sugar, oil, egg, buttermilk and vanilla; beat well. Stir in Rhubarb.
In a separate bowl combine dry ingredients. Add chopped nuts. Stir rhubarb mixture into the dry ingredients just until blended. Spoon into muffin tins. Combine topping ingredients and sprinkle on top of muffins before baking.
Bake in preheated oven for 20 - 25 minutes. Makes 18 muffins
