Preheat oven to 325 degrees. In a medium mix bowl combine sugar, oil, egg and buttermilk. In a small mixing bowl combine flour, baking soda and salt. Slowly combine dry ingredients with egg mixture. Stir in vanilla, rhubarb and nuts. Pour into greased and floured loaf pan. Mix glaze in a small bowl and pour on top. Bake for 1 hour.
