Easy to make side dish
Prepare rice in vegetable broth.
In a medium sauce pan, heat oil on medium high.
Saute onions, red pepper and garlic until soft (5 - 8 min).
Add green chiles, black beans, vinegar, water, oregano and heat for 10 min. Add extra water if necessary. The mixture should not get completely dry.
Season with salt and pepper.
Combine rice and vegetable mix.
