Turkey or poultry stuffing
Mix ground beef, onion, salt, pepper in heavy frying pan over low heat until beef is cooked but not brown nor crisp. Drain all fat from meat. Add oregano, poultry seasoning, coriander, celery and drained meat to rice. Toss together to mix thoroughly. Adjust seasonings to taste"fill neck and body cavity full but not packed. Truss and roast as usual. Yields enough for a 14 pound turkey. If there is extra dressing left, it may be frozen for use later or it is nice as a filling for cabbage rolls.
