Pre-heat the oven to 160C/325F and grease and flour a loose bottom tart tin (something around 26cm/9inch diam).
Make the pastry. Sift the dry ingredients into a bowl and then rub in the butter. Add the egg and mix to form a dough. If it's a little dry add a very small bit of milk and mix, then another little bit and so on until it just comes together. Wrap the pasty in plastic wrap and put in the fridge for 20mins.
For the filling. Melt the chocolate and the butter together in the microwave or in a bowl over barely simmering water. Once it's melted, out to one side to cool.
Once the chocolate's melted, it's about time to roll out the pasty. Roll to ½ cm (¼ inch) thick and carefully line the tart tin. Gently push the pastry into the sides and use off cuts to fill any tears that might appear.
Cover the pastry with a sheet of grease proof paper and fill with baking beads or dried beans/peas. Bake in the oven for 10-12 mins and then take out the paper and dried beans and cook for another 2mins without the oven fan on.
While it's cooking make the filling, as long as the chocolate's cool enough. Stick you finger in to check (you can lick it clean after). Beat the eggs, egg yolks and the sugar together in a bowl with a fork, then add the chocolate mixture.
Pour the mixture into the pastry crust and bake for 10-12mins without the oven fan on and then leave to cool.
Serve at room temp or slightly warm, with a little mascarpone, ice cream or cream fraiche.
