Pastry crust
Place flour, salt and sugar in food processor. Cut the butter into tablespoon sized pieces and add them. Process using pulses until it resembles oatmeal flakes. Stir together the yolk and water. Pour into mixture with the processor running. Stop processor. It should be damp enough to form a rough mass. Gather it into a ball and form it into a 9 inch tart pan.
Baking:
Form a double thick 12 inch square of aluminum foil. Poke a few holes and then press it snugly into the pastry lined pan. (also, poke fork holes into raw pastry dough -- bottom and sides.)
Partially baked --> Bake in a preheated 425 degree oven for 8 minutes. Lift out the foil, bake another 4 minutes.
Fully baked --> Bake in a preheated 425 degree oven for 8 minutes. Lift out the foil, bake another 8-10 minutes or until light brown, crisp and dry. Cool on a rack.
